Espiritu- Catuai Conditioned in Rumple Minze Peppermint Schnapps

Rumple Minze! This minty, sweet peppermint schnapps rears its head this time of year for peppermint cocktails or shots with old friends. Production of this spirit goes back to the Scharlachberg Distillery in Germany, and being 100-proof sets it apart from other sweeter, lower ABV schnapps in the American market. This spirit adds a candy-cane, peppermint patty profile to your standard cocktail, and in this case, we're utilizing this festive liquor to impart its characteristics on coffee. We are working with a washed Catuai from Guatemala, a bean that we often use for experimentation, giving us the ability to compare the unadulterated beans, the control, to experimental processes- in this case, Rumple Minze. After roasting the Rumple Minze-infused beans, any remaining alcohol is driven off, leaving behind just the aromatics and mintiness of the spirit!
